Blue Corn & Onion Tostadas

Ingredients

4 ea. Intros® Homestyle Breaded Onion Rings
1/4 cup Bountiful Harvest® Super Sweet Corn, thawed
1/4 cup Bountiful Harvest Black Beans
1/4 cup Villa Frizzoni® Roasted Red Peppers
1 tbsp. Lime Juice
2 tsp. Markon Ready-Set-Serve® Cilantro, chopped
Salt and Pepper, to taste
2 ea. Blue Corn Tostadas
1/2 cup Vista Verde® Refried Beans, heated
1/2 cup Markon® Arugula, packed

Directions

  1. Prepare onion rings as per directions on package.
  2. In a small bowl, mix together the sweet corn kernels, black beans, roasted red peppers, lime juice, cilantro, salt and black pepper to make the corn and black bean salsa.
  3. Spread the tostadas with an even amount of refried beans.
  4. Top each tostada with the corn and black bean salsa, arugula and 2 onion rings.
