- Once cooled, combine the roasted vegetables, poblano peppers, garlic, cilantro, water, salt, and pepper in a blender. Blend until smooth, adding more water as needed to reach desired consistency.
- Taste the salsa and adjust seasonings as needed.
TIPS
- For a smoother salsa, strain the blended mixture through a fine-mesh sieve.
- Serve with tortilla chips, as a topping for tacos, or as a dipping sauce for grilled meats.
