Grilled Corn with Cotija and Cilantro Recipe

Turn up the heat on your summer menu by putting ears of corn on the grill. Combine chargrilling with Shamrock Farms® unsalted butter and Katy’s Kitchen® signature cayenne pepper, to create a unique flavor profile for healthy sides.


4 ears of corn, husked, cleaned, and cut in two
2 Tbsp. cotija cheese
2 Tbsp. Shamrock Farms® Unsalted Butter
2 Tbsp. Katy’s Kitchen® mayonnaise
2 Tbsp. Markon® Ready-Set-Serve Bunched Cilantro
2 Tbsp. Markon® Ready-Set-Serve Lime Juice
1 tsp. lime zest
¼ tsp. Katy’s Kitchen® cayenne pepper


  1. Mix together cotija, butter, mayonnaise, cilantro, lime juice and zest, and cayenne pepper.

  2. Grill corn until charred. Slather ears of corn with mixture and serve (two halves per person).
