Stouffer’s Mexican Street Corn Mac & Cheese

Stouffer’s White Cheddar Mac and Cheese elevates classic comfort food with creamy, melty white cheddar cheese and tender cavatappi noodles. Check out this featured recipe from the 2023 Shamrock Foods EXPO by Nestle Professionals.

Ingredients

7 1/2 lbs. Stouffer’s® White Cheddar Mac & Cheese, heated

Chorizo and Roasted Corn Mix

  • 12 oz. Mexican chorizo sausage crumbles, prepared
  • 8 oz. roasted corn kernels
  • 3 oz. red onion, small diced
  • 1 oz. jalapeño, roasted, small diced
  • 1 oz. garlic, peeled, minced
  • 1 Tbsp. ground cumin
  • 2 tsp. ground ancho chili

Avocado Salsa Ingredients

  • 14 oz. Avocado, peeled, pitted, medium dice
  • 3 red onions, peeled, small dice
  • 1 oz. lime juice
  • 2 oz. Cotija cheese crumbles
  • 1/4 cup gresh cilantro, chopped
  • 4 oz. tomatoes, small dice

Directions

  1. In a large mixing bowl, combine Chorizo and Roasted Corn Mix ingredients and mix until combined. Hold hot for service.
  2. In a large mixing bowl, add all Avocago Salsa ingredients and mix until combined. Hold refrigerated until use.
  3. To serve one portion, ladle 10 oz. of Stouffer’s White Cheddar Mac & Cheese into a sauté pan and heat all the way through.
  4. Fold 2 oz. of the Chorizo and Roasted Corn Mix into the White Cheddar Mac & Cheese.
  5. Plate, and garnish with 2 oz. of the Avocado Salsa.
