A SHARED COMMITMENT TO TRADITION AND INNOVATION
Finca Monteblanco is a farm located along the winding mountain roads of the Vereda La Tocora in the San Adolfo municipality above Pitalito, Huila in Colombia. It is a beautiful family farm managed by Rodrigo Sanchez Valencia and his wife Claudia Sambon. Rodrigo and his family demonstrate the same entrepreneurial mix of tradition and innovation that has helped Shamrock Foods achieve 100 years of growth and prosperity.
Building on the tradition that began with his grandfather, Rodrigo innovated his farming to account for different cupping profiles. In doing so, he made more distinct connections between traditional farming techniques and the coffees’ resulting attributes in the cup.
During harvest, this lot of beans went through natural processing, where ripe cherries were placed in a solar dryer for five days, and dried for an additional 22 days on raised beds in the shade. The water content of the coffee cherries was closely monitored throughout the process, until they reached the desired 10.5-11% moisture. By applying an ethic of rigorous monitoring, planning, and management at each stage of production and processing, this bean showcases its luscious character.
