160g Barry Callebaut® Chocolate
30g Barry Callebaut Ruby Chocolate
120g Shamrock Farms® Heavy Cream
60g Shamrock Farms Heavy Cream
Barry Callebaut Dark Chocolate Pearls, garnish (SFC# 3986841)
4 Small Tart Shells


  1. Heat 120g heavy cream and add to chocolate, mix until incorporated.
  2. Pour dark chocolate in tart shells halfway up.
  3. Heat 60g heavy cream and add to ruby chocolate, mix until incorporated.
  4. Pour ruby chocolate over dark chocolate in tart shells.
  5. Let set and garnish with dark chocolate pearls.
