30g Barry Callebaut Ruby Chocolate
120g Shamrock Farms® Heavy Cream
60g Shamrock Farms Heavy Cream
Barry Callebaut Dark Chocolate Pearls, garnish (SFC# 3986841)
4 Small Tart Shells
Preparation
- Heat 120g heavy cream and add to chocolate, mix until incorporated.
- Pour dark chocolate in tart shells halfway up.
- Heat 60g heavy cream and add to ruby chocolate, mix until incorporated.
- Pour ruby chocolate over dark chocolate in tart shells.
- Let set and garnish with dark chocolate pearls.
